Learn the secrets to perfect risotto—master the method, build rich flavor, and create creamy, customizable dishes step by step.

What’s the secret to a perfect risotto? It’s all in the method, and Chef Fabricio Daro will show you how to prepare one of Italy’s most beloved comfort foods, and how to prepare it right.

Perfect risotto cannot be rushed, and neither is Classic Risotto: A Step-by-Step Guide.

Under Chef Fabricio’s guidance, you’ll learn why the right rice makes all the difference, how to build flavour from the base up, and the secrets behind key steps like la tostatura (toasting the rice to seal each grain and create a rich, nutty base), sfumare (how and when to deglaze with wine), and the ladle-by-ladle addition of broth to draw out the rice’s natural starches and develop risotto’s signature creamy consistency.

Once you’ve learned the fundamentals, Chef Fabricio will inspire you to adapt this classic risotto by incorporating your favourite seasonal vegetables, mushrooms, or even seafood to create your own versions of the dish at home.
